Wildebeest's cooks and bartenders are stirring up another great dinner. A four course menu paired with variations on a classic: The Old Fashioned. This classic cocktail, which made its first appearance in the mid-1800’s, is traditionally spirit-forward, and is always built and slowly stirred, never shaken. This dinner stays true to these roots, but offers modern variations featuring surprising liquors, assorted sweeteners, and alternative garnishes, resulting in lighter, more refreshing takes and playful riffs. Creating an Old Fashioned requires skill, attention, and an element that is often left out—time. The Old Fashioned like you've never seen it before.

On this occasion we'll be showcasing two of our favorite breweries from outside the city - Dageraad from Burnaby and Steel & Oak from New Westminster. Both breweries have secured their spot among the top brewing talent in British Columbia and we aim to showcase their amazing beer through our carefully selected head-to-head pairings.

Winemaker Tyler Harlton grew up in his family’s farming business in Saskatchewan before moving east in his twenties. While living in Montréal, an interest in wine led him to sommelier training where the hobby became a passion. Since then, Tyler has been an organic grower, a vineyard manager, and a cellar lackey, finally starting his own winery in 2011. His wines are made with minimal intervention, which means that the natural attributes of the grapes are not masked. They are a true reflection of the terroir of the vineyards and the particular vintage.
Wildebeest is excited to have Tyler join us for a six-course dinner paired with his handcrafted wines. Chef Alessandro Vianello and Wine Director, Justin Everett, have collaborated on the menu which focuses on the first flavours of spring and highlights Tyler's delicate touch in the cellar.

Located halfway between Montréal and Sherbrooke, Brasserie Dunham opened its doors in 2011 in the town of the same name. Inspired by classic European brewing traditions, Dunham aims to explore and innovate these styles. They pride themselves on their departure from the modern American styles that have dominated the North American craft beer scene for the last quarter century. Their beers may be aged in barrel, loaded with hops, intensely fruity, or delicately wild, either way tasting through their lineup will seduce your tastebuds and alight your senses.

Located on Galiano Island, one of BC's pristine Gulf Islands, Pilgrimme has made a name for itself under the partnership of Chef Jesse McCleery and Manager Leanne Lalonde. After spending time at Copenhagen's renowned Noma, Jesse set out to combine elements of the Scandinavian culinary aesthetic with ingredients particular to the Pacific Northwest.
Wildebeest Chef Alessandro Vianello and Chef Jesse, in partnership with Visa Infinite, tasked themselves with reinventing brunch with the flavours of coastal British Columbia.
