Wildebeest offers a unique dining experience beyond our nightly dinner service. For those who wish to enjoy a dinner truly shared with friends and family, book ahead and your group can feast on any of the following:



Slow-roasted lamb leg, garlic ash, lamb jus
     recommended for parties of 8 or more

Whole-roasted bone-in lamb saddle, black pepper jus
     recommended for parties of 8 or more

Whole grilled beef flank steak, herb emulsion
    recommended for parties of 4 or more




Whole roasted Jersey chicken, jus gras
     recommended for parties of 4 or more

Rolled pork shoulder 'porchetta', salsa verde
     recommended for parties of 8 or more

Bierwurst sausage, potato purée, mustard sauce

Whole roasted lobe of foie gras, Madeira sauce 
     recommended for parties of 4 or more



Seaweed-wrapped BC lingcod, dashi glaze
     recommended for parties of 4 or more

Sawmill Bay oysters, Ardbeg mist


These side dishes are designed for 2-4 guests

Roasted beets & apples with housemade ricotta 

Sunchokes with chestnuts & onions

Roasted heritage potatoes with bacon & sour cream 'powder'

Brussel sprouts with walnut sauce and fried sage

Kale with roasted shallot caramel
